Today I have for you a bit of a spin on the classic pumpkin bread recipe that we all know and love! This time of year sickness kicks up, and energy levels can decide to take a backseat to coziness. It is super important to level up on your immune boosting foods. That is why we are using spices galore in this recipe! I assembled my own blend here, but FGS sells an amazing pumpkin pie spice blend.
I used ginger, cinnamon, cardamom, and nutmeg ( not a huge fan of cloves, HOWEVER they are incredible tools for your immune system so definitely include if you so choose. ) Ginger is anti-inflammatory, and cinnamon is high in antioxidants. Cardamom can help lower blood pressure, and nutmeg is great for aiding in more restful sleep and improving brain health! Spices are so underrated in a healthy lifestyle and important to incorporate in our daily recipes. What is your favorite way to use spices?
Instead of the classic pumpkin, I used BUTTERNUT SQUASH, which is also in season (and you can get a beautiful organic one from For Goodness Sake!) Butternut is mild in flavor but keeps this bread super moist and nutritionally dense. Did you know that butternut squash is also high in antioxidants? But wait, why are antioxidants so important? In the words of Dr Axe, “You’ve probably heard the word “antioxidant” a lot in terms of various healthy foods, but why exactly are these qualities so important to your overall health? Antioxidants are free radical scavengers. Free radicals are compounds that are created by various bodily functions. They may also enter the body through various means, including exposure to certain chemicals, the sun or processed food products.” Vitamin A is also present in butternut squash—another great tool for fighting sickness.
You guys know me by now, and if you don’t you will soon learn that I LOVE chocolate. Not a huge fan of white or milk chocolate, but I can get down with the dark. So delicious and good for you. You already knowwww it’s in this recipe. Let’s get to it! Per usual, the ingredients you can find at For Goodness Sake will be marked with an asterix.
1 1/2 c almond flour*
1/4 c + 1 tbsp coconut flour*
1/4 tsp ginger, cardamom, nutmeg*
1/2 tsp cinnamon*
1/4 heaping tsp sea or himalayan salt*
1/2 tsp (aluminum free) baking powder*
1/2 tsp baking soda*
1 tsp vanilla extract*
1 c butternut*
1/3 c coconut oil*
3/4 c maple syrup*
1 1/2 c chocolate chips*
- Mix dry ingredients. Preheat oven to 350!
- Blend coconut oil, butternut, maple syrup and eggs in separate bowl. Be sure there are no chunks of squash.
- Incorporate all ingredients together.
- Bake for 40 mins. If your oven runs hot, check at 30 minutes.
Makes 2 loaves!
